AGA range cookers work differently from conventional ovens. Instead of relying on circulating air, they use radiant heat stored within the cast iron.
This gives an AGA its distinctive cooking style, but it can also make it harder to judge temperatures precisely. Knowing what each oven should reach helps you get the best results and identify when something may need adjustment.
How Hot Should an AGA Be?
A traditional two-oven AGA should reach around 230°C in the roasting oven when up to full temperature. This might sound high compared to modern ovens, but radiant heat cooks food more evenly, so it behaves differently to air temperature.
The simmering oven typically runs at about 140-160°C, and the baking oven, if fitted, usually sits around 190°C. Warming ovens are lower again, roughly 60-90°C, depending on the model and how the cooker is being used.
Checking the Temperature
To check that your AGA is running correctly, use an oven thermometer rather than relying only on the built-in dial or gauge.
- Place the thermometer on the middle shelf of the roasting oven.
- Close the door and leave it for ten minutes.
- Take a reading and note the temperature.
- Adjust the thermostat slightly if needed.
- Wait several hours before re-testing, as changes take time to stabilise.
The same process can be repeated in the other ovens to confirm even heat distribution. If the readings are consistently low, the cooker may need a service or fresh insulation.

If the cooker runs too cool, roasting times increase and energy is wasted. If it runs too hot, food can burn and the enamel may show early signs of stress.
Regular checks help maintain balance, particularly after refurbishment, servicing or fuel conversion.

If your AGA struggles to maintain temperature or varies significantly between readings, it could be due to issues with the thermostat, burner or insulation.
